Quiche "pie"

 

This morning after our daily walk, Madeline helped me make a "pie".... well since my thyroid DOES NOT WORK at all... I can't have sweet pie... so we made a quiche!  (Recipe to follow)

She amazed me with her comments that she loves mushrooms....and she could not wait to try her creation.

She ate the whole thing- Edam, spinach, onions & mushroom- quite advanced tastebuds for a 3 year old!

 

Crustless Quiche:
Preheat oven to 350 degrees then fry 8 strips bacon until crispy- drain on paper towels, crumble. Use 1 TBS of the bacon drippings to fry 1/2 cup minced sweet yellow onion for 5 mins. then set aside.

Butter or spray 10 inch deep pie plate or tart pan. In a large bowl combine: 6 eggs, 3/4 cup heavy cream, 2 boxes (10 oz each) frozen chopped spinach- this first needs to be thawed and squeezed dry), 1/2 cup shredded edam/parm cheese mixed, 1/2 tsp salt, 1/4 tsp pepper. Stir in bacon and onions- I added a small can of sliced mushrooms (drain before adding).

Pour mixture into prepared pan, cover with foil, bake for one hour and 15 mins. One hour into baking- take the foil off- finish 15 mins- take out of the oven to cool for 5 mins and enjoy!
